We started a New York Burrito franchise in Orem Utah. There is a a trend in the food industry, moving to deli style. Deli style means give the customer more choices and the product is fresher (made in front of the customer). We had space available in our current store so we started looking for a way to provide ice cream and other frozen deserts. We looked a marble stone concept but determined that if the ice cream was already frozen it would reduce the choices. Reflecting on my science background I decided to use a cryogenic solution. This way we stock only fresh cream mixes and allow the customer to determine what flavor to have mixed in. This way the customer gets to determine how strong the flavoring will be. They also get to pick the texture since we can control how frozen it gets. Truly custom ice cream.
